How to Make These Pumpkin Spice Overnight Oats

Make this simple recipe in just five minutes by mixing together the rolled oats, plant milk (I use oat milk from Trader Joe’s), pumpkin puree, maple syrup, chia seeds, dark chocolate chips, and pumpkin spice seasoning in a bowl or jar. Adjust the amount of maple syrup to your desired sweetness level. Cover it with a lid and place it in the fridge overnight. Top with coconut yogurt, more pumpkin spice seasoning, and more dark chocolate chips and enjoy!

Ingredients

  • 1/2 cup rolled oats

  • 1/2 cup oat milk or nut milk

  • 2 tablespoons pumpkin puree

  • 1-2 tablespoons pure maple syrup

  • 1 tablespoon chia seeds

  • 1 tablespoon dark chocolate chips

  • 1/2 teaspoon pumpkin spice seasoning

  • coconut yogurt, for topping

Directions

  • In a jar or bowl, mix together the oats, plant milk, pumpkin puree, maple syrup, chia seeds, dark chocolate chips, and pumpkin spice seasoning. 
  • Cover and place in the fridge overnight.
  • Top with coconut yogurt, more pumpkin spice seasoning, and more dark chocolate chips.
  • Enjoy!
