Say goodbye to boring salads with this homemade version of Trader Joe’s Spicy Cashew Butter Dressing! It’s spicy, bright, and flavorful – pour it over a bed of greens with edamame, quinoa, shredded carrots, cucumber, avocado, and green onions for a filling and delicious lunch!

How To Make This Spicy Cashew Butter Dressing

First, soak the cashews in boiling hot water for 10 minutes. This step is important to make the cashews soft for blending. If they are not soaked, the dressing could come out gritty.

Strain the cashews and add them to a small blender (I use a Magic Bullet). Add ½ cup water, coconut aminos, lime juice, minced ginger, maple syrup, salt, and Sriracha to the blender and blend for 1-2 minutes until completely smooth. Now add the cilantro and chili flakes and pulse for a few seconds until just combined.

Taste and adjust the ingredients to your liking! Add more lime juice for tanginess, ginger and cilantro for flavor, maple syrup for sweetness, salt for saltiness, and Sriracha and red chili flakes for spiciness.

Ingredients

  • 1/2 cup raw cashews, unsalted

  • 1/2 cup water, plus more for soaking

  • 1 tablespoon coconut aminos

  • 1 tablespoon fresh lime juice

  • 2-3 teaspoons fresh minced ginger

  • 1 teaspoon maple syrup

  • 1 teaspoon Sriracha (or to taste)

  • 1/2 teaspoon salt

  • 1 tablespoon fresh cilantro

  • 1/2 teaspoon red chili flakes

Directions

  • Soak the cashews in boiling hot water for 10 minutes. Drain them and then add them to a small blender.
  • Add the ½ cup water, coconut aminos, lime juice, ginger, maple syrup, salt, and Sriracha to the blender and blend for 1-2 minutes until completely smooth.
  • Add the cilantro and chili flakes and pulse to combine (this should only take a few seconds). Taste and adjust ingredients to your liking.
  • Enjoy! Transfer the dressing to a jar and store in the fridge for up to a week.
